Chili Roasted Eggplant

I used baby eggplant for this, but you could totally just cut a larger eggplant into cubes πŸŒΆοΈπŸ†

Chili Roasted Eggplant

Easy 6 Servings 35 Minutes

Ingredients

  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 1-2 tablespoons extra virgin olive oil

Instructions

  1. Preheat oven to 400 and line a baking sheet with parchment. In a mixing bowl, whisk ingredients with extra virgin olive oil.
  2. Toss with eggplant to coat. Bake until fork tender and golden brown, about 15-20 minutes.
  3. Serve with a squeeze of fresh lime and a sprinkle of flakey sea salt. Yum!!
