Bailey’s Deliciously Light Parfait

Grown-up chocolate mocha pudding parfaits...it’s not complicated! #ad

Started with my simple chocolate pudding recipe and stirred in the new @baileysus Deliciously Light...made whipped cream...more Baileys...then topped it all with crushed freeze-dried raspberries, chopped pistachios, and chopped dark chocolate. Baileys Deliciously Light is made with 40% less calories and sugar than the original, and let me be the first to tell you that you can’t taste the difference! This dessert is rich and luxurious, with all the flavors of Irish whiskey, cocoa, cream, and vanilla flavor. So easy and pretty too 😍

Bailey’s Deliciously Light Parfait

Yield: 4 servings

Ingredients

  • 1 cup Cocoa powder
  • 1/2 cup Sugar
  • 3 tablespoons Cornstarch
  • 1/2 teaspoon Kosher salt
  • 3 cups Almond milk
  • 1 and 1/4 cup, divided Bailey's Deliciously Light
  • 2 teaspoons Vanilla extract
  • 1 cup Heavy cream, chilled
  • 2 tablespoons Confectioners' sugar
  • 1/4 cup Chopped, roasted and salted pistachios
  • 1/4 cup Crushed freeze dried raspberries
  • 1/4 cup Chopped dark chocolate

Cooking Directions

  1. In a large saucepan set over medium heat, combine the cocoa, sugar, cornstarch, and salt and mix well. Whisk in the milk and 1 cup Baileys. Stir constantly with a wooden spoon while the mixture comes to a low boil and begins to thicken, 5 to 6 minutes. Reduce the heat to low. Stir constantly as the mixture continues to thicken to the consistency of pudding, another 7 to 8 minutes. Remove from the heat and stir in the vanilla. Place plastic wrap directly on the surface of the pudding to prevent a skin from forming, and then cool to room temperature. Refrigerate until chilled, 2 to 3 hours.
  2. Once the pudding is chilled, add the heavy cream, 1/4 cup Bailey’s Deliciously Light and the confectioners’ sugar to the bowl of a stand mixer. Beat until stiff peaks form. Chill until serving.
  3. Divide pudding into 4 wine or martini glasses. Top with whipped cream and pistachios, raspberries, and chocolate.
